This recipe is the easiest of the ease – try it out:
2 Cups APF
2 Cups Cornmeal
12 Tbs sugar
5 tsp baking powder
1/2 tsp baking soda
pinch of nutmeg (optional)
2 cups butter milk
6 tbs melted and cooled butter
3 Tbs corn oil ( I used vegetable)
1tsp salt
2 large eggs
2 large egg yolks
2 cups corn kernels
Makes 24 muffins
Preheat oven to 400F.
In a bowl or standing mixer, mix together flour, cornmeal, sugar, baking powder, baking soda, and nutmeg if you so wish. In a separate bowl, mix together the milk, eggs, egg yolks, butter and oil. Whisk the wet ingredients together well until all is incorporated. Add the wet ingredients to the dry and mix it! When you no longer see any dry ingredients, add your corn kernels. Incorporate them well, and divvy them out into your muffin tins.
Bake for 15-18 minutes until cooked all of the way through.
