Makes ~ 6 muffins
Muffins
2/3 Cup Whole Wheat Flour
1/2 Cup APF
1 1/2 tsp Baking Powder
pinch of salt
1 tsp Ground Cinnamon
1/4 Superfine Sugar
2 Apples, peeled cored and chopped
1/2 Cup Milk
1 Egg, beaten
4 Tbsp Butter, melted
Streudel
1/2 Cup Sugar
1/3 Cup APF
1/4 Cup Butter, melted
1/2 tsp ground cinnamon
Preheat the oven to 400F.
Whisk together the flours, baking powder, salt, and cinnamon. Then add chopped apples and sugar. Coat the apples thoroughly with the dry mixture.
In a mixing bowl, combine milk, egg, and butter until well blended.
Toss the apple mixture into the wet ingredient bowl, and mix together, but not overly so – it is OK to have lumpy batter.
In a separate bowl, combine all streudel ingredients until well mixed and held together by the butter.
Dollop batter into cupcake molds (paper or silicone), and sprinkle on the streudel.
Bake for 20-25 minutes or until a tester comes back clean. Let cool, and enjoy!
